There’s a chapter in a Nigella Lawson cookbook somewhere, entitled ‘The Solace of Stirring’, and I firmly believe that cooking can be very therapeutic in this manner. Throwing ingredients in a pan, cooking & blending may seem a little dull, but I can often find myself needing to do some unhurried cooking, where the stirring is actually rather relaxing. This recipe is not groundbreaking in any particular way, but because the result is extremely tasty and the process of creating it is rather nice, I feel it well deserves its place on the blog. Feel free to play around with the components too, adding & subtracting as you see fit!

Serves 2-3

  • Garlic. 1 clove
  • Ginger. 2 inch piece
  • Red chili. 1/2
  • Fresh coriander. 1 large handful (stalks & leaves separated)
  • Sweet potatoes. 3
  • Red pepper. 1/2
  • Coconut oil. 1 tbsp
  • Coconut milk. 400ml can
  • Vegetable stock. 600ml
  • Lime. 1
