I’m a firm believer that with great BBQ comes great dry spice rubs. They are the quintessential component to cooking on any grill for a number of reasons. Dry spice rubs allow you to coat whatever protein you’re about to put on your grill with less worry of it caramelizing to the point of burning. There are fewer flame flareups when using dry spices to season the food you grill, preventing the actual protein itself from charring beyond the point of no return. And much like a wet marinade, dry spice rubs do what you hope any pre-seasoning will do — they give immense flavor to the food you are grilling. The longer you let your rub sit on your protein, the deeper the flavor will go.

Oh wow, how exciting! I’ve made it to the Community Pick level for the most recent Food52 cooking contest for Your Best Recipe Made with Coffee! This was a tricky category for me as I don’t cook a lot of desserts (as you can probably tell by the amount of recipes available in that category on my blog).

This was a great piece of news for the start of a three-day weekend for me! Yay! I’ve never made it to the finals but bragging rights at this level are still OK, right?

Cupcakes For Valentines Day And Fiesta Friday #106

Cupcakes look to good to eat.But because chocolate is involved Yummmy!Happy Valentine’s

IMG_0551Chocolate cupcakes with a cream cheese buttercream filling and covered with ganache, I saw these in an email or instagram or something from Williams Sonoma only they used a strawberry cream cheese filling which sounds delicious,  but I opted for a vanilla cream cheese filling instead. The cupcakes are adorable and mimic the famous Hostess Cupcake with the white squiggle on top of the icing, Instead of the squiggle you write a valentine message or pipe some hearts. I thought they were too cute (and delicious) not to make. My writing/piping skills are not that great and I think I should have followed a recipe for the icing used to write because it ran a bit, no it’s not your eyes that are blurry it’s the runny icing. Despite the less than perfect appearance they are quite delicious. Because I was having a hard time with the writing I decided…
