Sweet Potato Home Fries

I LOVE home fries! The town I currently live in is popular for their garbage plates, which usually includes a mixture of meat, home fries, macaroni salad, and other assorted toppings. The home fries bring everything together. For breakfast they’re pretty good too, although I grew up with real hash browns as my breakfast potato of choice.
