Strawberry Swirl Cheesecake

This no bake cheesecake has a very simple recipe and is easily tweaked depending on what fruit you have available. I chose strawberries as the mix in but raspberries or blue berries would work well too.

I got the basic ingredients for a no bake cheesecake from Martha Stewarts Website. I followed her method for the most part but did make some changes which you will see below!

Ingredients:

25 graham crackers

11 tablespoons of unsalted butter

2 tablespoons of sugar

2 packages of cream cheese, at room temperature

1 can of sweetened condensed milk

2 teaspoons vanilla extract

Swirl:

1 carton of strawberries

2 tablespoons of sugar

Method:

  1. Crush the graham crackers in a zip lock bag and mix together with the butter an sugar.

Toasted Coconut, Pecan & Cinnamon Butter

Inspiration from this comes from my discovery in Amelia Freer’s new book ‘Cook. Nourish Glow’ that you can make coconut butter simply with dessicated coconut! I love anything deceptively simple yet unexpectedly delicious (see my Red Grape & Rosewater Sorbet recipe for a prime example!), so this led me to create my own version totally from scratch. Maple, pecan & cinnamon are amazing bedfellows, and all combined together makes something so incredibly more-ish that I sat and ate most of it in one sitting! But when you make this you must be patient! Accept that it will look like unpromising, brown sand for a while, but the released oils from the coconut and pecans, as well as the coconut oil itself will make the mixture magically thicken into a thick, spreadable consistency. Oh wow, how exciting! I’ve made it to the Community Pick level for the most recent Food52 cooking contest for Your Best Recipe Made with Coffee! This was a tricky category for me as I don’t cook a lot of desserts (as you can probably tell by the amount of recipes available in that category on my blog).

This was a great piece of news for the start of a three-day weekend for me! Yay! I’ve never made it to the finals but bragging rights at this level are still OK, right?

Finding creative ways to use leftover deli rotisserie chicken (or even home-roasted for that matter) can sometimes be a challenge. I was pretty stoked when this recipe for chicken croquettes showed up in my WP reader board for a unique and delicious way to use up some leftover cooked chicken. (Thank you Fabulous Fare Sisters for making my day!)

My local grocery just started offering rotisserie chicken breasts pieces for sale instead of the whole chicken. OMG what??? I am not a huge fan of dark meat (although I know it is juicier, but I let hubby always take care of that part of the chicken.) But wow, it was so nice to get some deli-roasted chicken *knowing* all the leftovers would be used up before freezing it and turning it into chicken stock. Yes, that is a nice feeling indeed…
