This week’s grain harvest recipe features Apples. Apple Brown Betty is a favorite apple dessert that I grew up with. It is best served warm with your choice of toppings, whipped cream with a sprinkle of cinnamon, ice cream, hard sauce, or a drizzle of caramel. October 5th is National Brown Betty Day here in the US.
Apple Brown Betty
Ingredients:
1/3 cup melted butter
2 cups fresh bread crumbs
6 cups sliced, pared, cored cooking apples
1/2 granulated or light brown sugar
1/2 teaspoon nutmeg
1/4 teaspoon cinnamon
1 tablespoon grated lemon rind
2 tablespoons lemon juice
1/4 cup water
Directions
Heat oven to 375 degrees. Toss butter with crumbs in a bowl, and arrange one-third of this mixture in a greased 1 1/2 Quart casserole. In a medium bowl, mix sugar, nutmeg, cinnamon, and grated lemon rind. Cover with half of the apples and half of the sugar mixture. Cover with one-third of the crumbs, and layer on the rest of the apples and sugar mixture. Spoon on the lemon mixture and cover with the rest of the crumbs. Bake covered, 1/2 hour. Uncover and bake an additional 1/2 hour or until the apples are done. Makes 6 Servings
