Grain Harvest Recipe: Zucchini Muffins

This week’s grain harvest recipe features wheat and zucchini. If you are like me, your Zucchini plants are prolific, and before the season is over, we are looking for Zucchini recipes to use up the extra zucchini. I found that sharing Zucchini bread, muffins, etc.. with my neighbors is less frowned upon than the large bag of zucchini anonymously left on their porch. However, if you are the lucky recipient of a neighbor’s zucchini overflow, here is a recipe to help you out. to add some variety, you can add dried cranberries or raisins.

Grain Harvest Recipe: Zucchini Muffins

Zucchini Muffins
Yield: 12 Servings

Vegetable Oil
2 c Whole Wheat Flour
1 TB Baking Powder
1/2 ts Salt
1 ts Ground Cinnamon
3/4 c Skim Milk
2 Egg Whites — Slightly Beaten
1/4 c Oil
1/4 c Honey
1 c Zucchini — Shredded
1/2 c raisins or dried cranberries[optional]

1. Preheat oven to 375 F and grease muffin tins lightly with oil. 2. Mix dry ingredients together thoroughly. Mix remaining ingredients and add to dry ingredients. Stir until dry ingredients are barely moistened. Batter will be lumpy.
3. Fill muffin cups 2/3 full. Bake until lightly browned (about 20 minutes).
