Gluten Free Apple Cake Muffins

Gluten Free Apple Cake Muffins
Ingredients:
1 1/2 cups gluten free flour
1/2 cup potato starch
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. xantham gum
1/2 tsp. sea salt
2  tsp. cinnamon
1/4 tsp. nutmeg
3/4 cup light brown sugar
2 eggs
1/2 cup canola oil
1/2 cup milk or milk substitute
1 tablespoon vanilla
1 cup diced peeled apples
Instructions:
Preheat oven to 375 degrees.
In a large mixing bowl, whisk together flour, potato starch, baking powder, baking soda. xantham gum, sea salt, cinnamon, nutmeg and brown sugar. Add the eggs and oil and beat to combine. Add the milk and vanilla and continue beating until smooth. Stir in the apples by hand and then smooth batter into muffin cups that are lined in a muffin pan Bakes for about 22 minutes or until muffins are firm.
