Fruit and berries such as peaches, raspberries, are readily available now paired with seasonal melons and herbs create a tasty hot weather thirst quencher.
Lavender Peach Lemonade
2 cups lemon juice
1 1/3 cups peach nectar, chilled
1 1/3 cups Chamomile-Lavender Simple Syrup
1 cup white grape juice, chilled
Cantaloupe and/or honeydew melon balls and lemon slices (optional)
In a pitcher combine lemon juice, peach nectar, simple syrup and white grape juice. Transfer mixture to a serving pitcher. Pour into ice-filled glasses. Garnish with melon balls and lemon slices, if desired.
2 cups of water
2 cups of sugar
In a small saucepan combine water and sugar. Bring to a boiling, stirring to dissolve sugar. Remove from heat. Cool to room temperature. Cover and chill at least 2 hours or up to 2 weeks.
Chamomile-Lavender Simple Syrup:
Prepare as above except stir 1/4 cup chamomile lavender herbal tea blend in with the sugar and water. After removing from the heat, let stand at room temperature for 1 to 2 hours. Strain after cooling.
Summer Berry Cooler
2 cups sliced strawberries
1/2 cup raspberries
3 tablespoons frozen apple juice concentrate, thawed
1 12 ounce can diet lemon-lime carbonated beverage
In a blender, combine strawberries, the 1/2 cup raspberries, and the apple juice concentrate. Cover and blend until smooth. Pour mixture through a sieve into a small pitcher, pressing berries with a potato masher or back of a large metal spoon to extract all of the liquid. Discard pulp.
Slowly pour lemon-lime beverage into berry mixture; stir gently.
Serve in glasses over ice cubes. Garnish each serving with a small skewer threaded with additional raspberries.
