Summer Fruit Drinks

Summers has finally found its way to North Eastern Michigan. Here are a couple of the drinks that I like to cool of with on a hot day. Each of these make enough for you to have several servings and to share .

Summer Fruit Drinks

Raspberry Lemonade Spritzers

Ingredients
1 12 ounce package frozen red raspberries, thawed, or 3 cups fresh red raspberries
10 cups sparkling water, chilled
1 12 ounce can frozen lemonade concentrate, thawed
Ice cubes
Lemon slices and/or fresh red raspberries
Directions
Place raspberries in a blender or food processor. Cover and blend or process until smooth.
Press puree through a fine-mesh sieve to strain out seeds; discard seeds.
In a punch bowl combine raspberry puree, sparkling water, and lemonade concentrate.
Serve in glasses over ice. Garnish with lemon slices and/or fresh raspberries.

Summer Fruit Drinks

Summer Fruit Daiquiri
Ingredients
3 cups sliced peeled fresh peaches; unsweetened frozen peach slices, thawed; fresh or frozen unsweetened strawberries, thawed; fresh or frozen cubed mango, thawed; or cubed, seeded watermelon
1/2 12 ounce can (3/4 cup) frozen limeade or lemonade concentrate, thawed
1/4 cup (2 ounces) light rum or orange juice
2 tablespoons powdered sugar
2 cups ice cubes
Fresh peach chunks, small fresh strawberries, mango cubes, or watermelon cubes (optional)
Directions
In a blender combine the 3 cups fruit, the limeade concentrate, rum, and powdered sugar. Cover and blend until smooth. With blender running, gradually add ice cubes through opening in lid until mixture is desired thickness. Serve in glasses. If desired, garnish daiquiri with fruit pieces threaded on wooden skewers.
