Microwave Brittle

Microwave Brittle
This brittle recipe can use any type of nuts such as pecans, peanuts etc.. let your imagination and your taste buds run wild with this quick easy idea.
1 cup white sugar
1/2 cup light corn syrup
1 tsp cinnamon
1/2 tsp cloves
1/8 tsp salt
1 cup nuts
1 tsp butter
1 tsp vanilla extract
1 tsp corn starch
1 cup of ice water
Butter the bottom of a cookie sheet and the sides and bottom of a microwave safe dish. Fill a glass with ice water and put to the side. Put the sugar, light corn syrup, cinnamon, cloves, salt and nuts in a microwave safe dish and stir. Place in the microwave and cook for 5 minutes. Take it out of the microwave and stir then put it back in the microwave for 2 minutes. Take it out of the microwave stir and drop one drop of the mixture into the ice water. The drop should be at the hard ball stage. If not place the mixture back in the microwave for 1 minute. Take it out of the microwave oven and add the vanilla, butter and corn starch and stir quickly. It will fizz up and that’s what you want it to do. Once incorporated pour onto the cookie sheet to harden.
