1 cup white sugar

½ cup light corn syrup

¼ cup water

1/8 Tsp salt

1 cup shelled pumpkin seeds

½ Tsp cinnamon

¼ Tsp cloves

2 Tbsp butter

1 Tsp Vanilla Extract

1 Tsp Corn Starch


Line a cookie sheet with aluminum foil and grease the foil. In a saucepan add the sugar, syrup, water and salt. Bring this mixture to a boil over medium heat and stir until the sugar has dissolved. Stir in the nuts, cinnamon and cloves. Continue to cook and stir the sugar mixture frequently until it has reached 300 degrees. Remove it from the heat and immediately add the butter, vanilla and cornstarch. Stir quickly and allow the butter to melt. The cornstarch will cause the mixture to bubble up; this is what it is supposed to do. Immediately pour the brittle onto the cookie sheet and help it to spread into a thin layer. Once it has cooled break the brittle into pieces.
