Gluten Free Pumpkin Chocolate Chip Bars
Ingredients
- 3/4 cup buttermilk
- 1 cup sugar
- 1 cup brown sugar
- 1/3 cup butter
- 1/2 cup peanut butter
- 1 15 oz can pumpkin
- 2 teaspoons vanilla
- 2 cups rice flour
- 2 tablespoons corn starch
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 cups Chocolate chips
Directions
- Heat your oven to 350 degrees. Prepare a 9 X 13 baking pan by spraying it with vegetable spray
- Combine sugars, butter, and peanut butter. Whip until light and fluffy. Add the remaining wet ingredients (pumpkin, buttermilk, and vanilla) and stir until well-combined.
- In a separate bowl combine rice flour, corn starch, baking powder, baking soda, and salt. Pour the dry ingredients over the pumpkin mixture and stir until the batter is smooth. Finally, add the chocolate chips and stir until mixed well.
- Spread the batter into the prepared pan and bake for 30 minutes
Gluten Free Pumpkin Buttercream Icing
- 1 cup Butter Sticks
- 1/2 cup canned pumpkin
- 2 1/2 cups powder sugar
- 1/4 tsp. ground ginger
- 1/3 tsp. nutmeg
- 1/4 tsp. cloves
- 3/4 tsp. ground cinnamon
- 1 Tbsp. gluten-free almond extract
- 1 Tbsp. almond milk
In a large bowl, whip butter until fluffy then Slowly, add remaining ingredients and mix well.
