Pumpkin Muffins are a treat that goes well at brunch, or for a quick snack with your afternoon tea. They fit the taste buds right through the winter holiday season.
Pumpkin Muffins
Ingredients:
2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 stick butter or margarine, softened
1/2 cup sugar
2 eggs
1/2 cup buttermilk
2/3 cup cooked, mashed pumpkin
1/4 cup brown sugar
2 tablespoons molasses
1/2 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon ground cloves or allspice
Instructions:
In a small bowl, sift together the flour, baking powder, baking soda, and salt. In a separate large bowl, beat butter and sugar until fluffy and pale. Beat in eggs and buttermilk until well-blended. Add flour mixture to form a batter. Preheat oven to 375ºF. In a medium bowl, mix pumpkin, brown sugar, molasses, cinnamon, ginger, and cloves until well-blended. Stir into the batter. Ladle batter into 12 2 1/2-inch greased muffin cups and bake for 15-17 minutes. Cool for 5 minutes, then cool on a rack.
Yield: 1 dozen
